About Sara Foley
Sara Foley is a clinical associate professor in the College of Health Sciences nutrition program at the University of Memphis, where she also serves as the clinical coordinator for the Clinical Nutrition Master’s and Dietetic Internship programs. Prior to her role at UofM, Sara spent over nine years at the VA Medical Center in Memphis, where she held various positions, including food systems dietitian, dietitian for both inpatient and outpatient spinal cord injury units, and covered multiple units and assignments as needed.
In her previous roles, Sara has precepted numerous dietetic interns, spearheaded quality improvement initiatives, led multiple research projects, and completed several coaching, mentoring and leadership programs. Her involvement on state and local nutrition and dietetics boards has further enhanced her leadership skills and expanded her professional network.
Sara discovered her passion for teaching and mentoring students when she became an adjunct faculty member in 2015. This experience paved the way for her appointment as clinical coordinator in January 2016. Since then, she has focused on fostering partnerships with community organizations to enrich the clinical and community experiences available to dietetic interns.
